How to cook Rendang Padang


This is the recipe for Rendang Padang if you want the glorious taste without that overly-rich oil feel that makes you weep with guilt after. - Recipe taken from The New Paper (Sunday) 20th April 2012. Original recipe is from Madam Tumiar Simandijuntak, 78 from Medan, Sumatra.

Recipe for Rendang Padang:
Ingredients:
  • 1 kg of Beef, cut into 4cm-thick slices
  • 10 dried chillies
  • 4 red chillies
  • 10 shallots
  • 5 cloves of garlic
  • 5 cm-thick piece lengkuas (galangal)
  • 5 cm-thick piece old ginger
  • 4 stalks of lemongrass (use only 7cm of the root part)
  • 4-5 kaffir lime leaves
  • 1 daun kunyit (tumeric leaf)
  • 1 tsp ground coriander
  • 2 coconuts (only grated white portions)
  • 2 slices of assam keping (sour fruit)
  • 1 tbsp of tamarind mixed with 2 tbsp of water. Strain and reserve.
  • 250ml of water
  • 2-3 tbsp of cooking oil
Method:
  1. Soak the dried chillies for 20 mins. or until soft. Rinse chillies and set aside.
  2. Put half of the grated coconut in a muslin cloth and pour in the 250ml of water. Squeeze to extract the coconut milk. Refrigerate.
  3. Heat the wok or a non-stick frying pan. Fry the remaining grated coconut over low heat, stirring constantly to prevent it from burning. Do not use oil. It should take around 30 mins. to get the grated coconut to brown.
  4. Allow to cool, then blend till fine. Set aside 3 tbsp for use later. Store the remainder in a glass jar and refrigerate.
  5. Grind the dried chillies, red chillies, shallots, garlic, lengkuas, old ginger and lemongrass together to make the rempah. Use a little water to help the process if you are using a blender.
  6. Heat 2-3 tbsp of oil in a pot over a small fire. Add the rempah and fry until it browns and give off a strong aroma.
  7. Add daun kunyit and lime leaves.
  8. Add beef and fry until the beef is coated with rempah.
  9. Add the coconut milk and 1 tsp of salt or more to suit your taste, and the ground coriander.
  10. Next the assam keping and tamarind juice. Cover and allow to simmer over low heat, stirring occasionally, for two hours until the beef is tender.
  11. Add in 3 tbsp of the toasted grated coconut and stir thoroughly.
  12. Serve with hot rice.

Serves: 4 persons

Ingredient:

 1 cup white beans or 150 g, dried
2 tablespoons vegetable oil
2 medium onions or 300 g, chopped
300 g lamb shanks, cut into medium cubes
1 teaspoon mixed spices
4 cups water or 1 liter
2 cubes MAGGI® Chicken Bouillon
3 medium tomatoes or 450 g, diced
3 cloves garlic, crushed
½ cup coriander leaves or 35 g, chopped
 
Preparation

Soak white beans in water for 12 hours. Drain and set aside.

Heat oil in a large saucepan. Cook onions and meat. Season with spices and stir for 4-5 minutes.

Add water, MAGGI® Chicken Bouillon cubes, white beans and tomato. Bring to boil and simmer over low heat for 1 hour or until meat and beans are cooked.

Add garlic and coriander and simmer for another 5 minutes.

Ingredients

1½ kg baby zucchini
2 tablespoons ghee
1 medium onion or 150 g, finely chopped
350 g minced lamb
½ teaspoon ground cinnamon
½ teaspoon ground black pepper
¾ cup egyptian rice or 150 g, washed and drained
1 medium tomato or 150 g, finely chopped
2 cups water or 500 ml
3 cloves garlic, crushed
2 tablespoons tomato paste
2 cubes MAGGI® Chicken Bouillon

Preparation

Hallow the zucchini, wash well and set aside.

Heat ghee in a large saucepan then add onion, meat, spices and sauté while stirring for 3-4 minutes. Remove from heat. Stir in rice and tomato.

Stuff the zucchini with the meat and rice mixture and arrange in a large casserole. Place 2 plates on top of the zucchini to press them down.

Combine water, garlic, tomato paste and MAGGI® Chicken Bouillon cubes in a sauce pan, bring to boil then pour over the zucchini in the casserole.

Cover and simmer over low heat for 1 hour or until zucchini and rice are cooked.

Yee Foo Mee (longevity noodles)


Yee Foo Mee or Yee Fu Noodles can be purchased from supermarkets. It is sold pre deep fried, chewy noodles made from wheat flour and egg. While there are many versions available, here is a simple recipe on how to cook it.

Ingredients:
  • One round of crisp Yee Foo mee, scalded with boiling water and drained
  • 2 cloves garlic, minced
  • 1 large onion sliced
  • A slice or two fresh ginger
  • 2-3 grams green vegetable like kailan or chye-sim, cut into pieces, or shredded cabbage
  • Some carrots, julienned (optional)
  • Some beadsprouts
  • 2-3 grams prawns
  • 2-3 grams chicken meat, sliced
  • Chicken stock
  • 10 black mushrooms, sliced
  • 1 tbsp  of oyster sauce
  • dash of white pepper
  • 1/2 tbsp of sesame oil
  • 4 dessertspoons oil
  • Coriander leaves or chopped spring onions for garnishing
Method:
  1. Put oil in pan. Add garlic and fry till light brown.
  2. Add sliced onions.
  3. Add chicken and fry a little. Add prawns.
  4. Add chicken stock, pepper, salt to taste, oyster sauce and sesame oil. Simmer.
  5. Add vegetables and carrots. Leave to cook.
  6. Add sliced mushrooms.
  7. Add Yee Foo noodles. Stir quickly. There must be sufficient stock to make a rather moist consistency.
  8. Garnish with coriander or spring onions. Serve with plenty of cut chillies and soy.

Moroccan-spiced chicken recipe

Served with roast vegies and mint couscous, this Moroccan chicken dish is as colourful as it is tasty.

Preparation Time 25 - 145 minutes
Cooking Time 50 minutes

Ingredients (serves 4)

1 lime
2 garlic cloves, crushed
1 tbs chopped fresh mint
1 1/2 tbs Moroccan seasoning
60ml (1/4 cup) olive oil
4 (about 800g) chicken thigh cutlets (skin on), excess fat trimmed
2 (about 350g) red Delight potatoes, peeled, cut into 1.5cm pieces
1 (about 600g) sweet potato (kumara), peeled, cut into 1.5cm pieces
2 carrots, peeled, cut into 1.5cm pieces
2 red capsicums, seeded, cut into 1.5cm pieces
2 large zucchini, cut into 1.5cm pieces
2 red onions, cut into 8 thick wedges
240g (1 1/4 cups) couscous
375ml (1 1/2 cups) boiling water
30g butter
1/3 cup fresh mint leaves

Method

Preheat oven to 220°C. place a baking tray in oven. Use a zester, or a vegetable peeler and a small sharp knife, to cut lime rind into thin strips. Juice the lime and reserve juice.

Combine lime rind, garlic, chopped mint, Moroccan seasoning and 2 tablespoons of oil in a glass bowl. Season with salt and pepper.

Place chicken in a large glass bowl. Pour over three-quarters of the marinade and rub over chicken to evenly coat. Cover and place in the fridge for 1-2 hours to marinate.

Combine the potato, sweet potato, carrot, remaining marinade and remaining oil in a glass bowl. Place on the baking tray. Place the chicken on top of the vegetables. Bake for 25 minutes. Add capsicum, zucchini and onion to tray and toss to combine. Roast for 25 minutes or until juices run clear when the thickest part of the chicken is pierced with a skewer and vegetables are tender.

Place couscous in a heatproof bowl. Pour over the boiling water. cover. Set aside for 5 minutes or until the liquid is absorbed. Add butter. Use a fork to separate grains and stir to combine. Stir in mint leaves and reserved lime juice. Serve with chicken and vegetables.

Notes


Make-ahead tips: To freeze: Cool at end of step 4. Wrap chicken in 2 layers of plastic wrap and 1 of foil. Place vegetables in a sealable plastic bag. Freeze for up to 3 months.

To thaw: Thaw overnight in the fridge.

To reheat:
Preheat oven to 150C. Unwrap chicken. Transfer vegetables to a baking tray lined with non-stick baking paper. Place chicken on vegetables. Cover with foil and cook for 15-20 minutes or until heated through. Continue from step 5.

How to make Rasam


Indian food. Recipe for Rasam. Traditional preparation involves tamarind juice as base in addition to tomato, chili pepper, Pepper, Cumin and other spices as seasonings.

Ingredients for Simple Rasam:
  • 1 tbsp tamarind pulp
  • 1 cup hot water
  • 2 cloves garlic, sliced
  • 3/4 tsp ground black pepper
  • 1 tsp ground cumin
  • 4 cups of cold water
  • 2 tsp salt
  • 2 tbsp chopped fresh coriander leaves
  • 2 tsp oil
  • 1 tsp black mustard seeds 8 curry leaves
Method:
  1. Soak tamarind in hot water for 10 mins, squeeze and dissolve pulp in the water and strain.
  2. Put tamarind liquid, garlic, pepper, cumin, water, salt and coriander into a sauce pan and bring to boil.
  3. Turn heat down and simmer for 10 minutes.
  4. In another pot, heat oil and fry mustard seeds and curry leaves until leaves are brown. Add to the simmering liquid.

Ingredients

1 Tbs yeast
¼ Cup water, warm
2 ½ Cup flour
½ tsp salt
½ tsp sugar
¾ Cup milk
¼ Cup oil
1 Egg, beaten +2 Tbs milk

Method

- Dissolve yeast in warm water, leave for 5 minutes or until foamy.
- Combine flour, salt and sugar in an electric mixer on low speed.
- Add yeast mixture, milk and oil while beating on medium speed for 10 minutes or until soft dough is formed (can be mixed with hands for about 25 minutes).
- Place dough and roll in a greased bowl, cover and let rise for 1hour or until doubled in size.
- Roll dough on a lightly floured surface into a (½ cm thickness) circle. Cut into approximately 7 cm circles.
- Brush circle edges with the egg mixture and fill one side of the circle as desired (for example white cheese and dried mint mixture), then fold into a half circle; pinch the edges with a fork to seal. (Hint: flour the fork so it won’t stick with the dough).
- Brush with the egg mixture, prick with a fork, sprinkle with sesame seeds, black sesame or crushed pistachios (as desirer).
- Bake for 15 minutes or until golden (time may vary according to filling).

Serving Suggestions

*For spinach filling:
(Olive oil/ spinach, cut/ pomegranates seeds/pomegranates syrup/lemon juice)
- heat oil in a skillet over medium heat, add ingredients and stir until done.
- Fill pies by adding a portion of the mixture in the middle of the dough circle, then fold edges to meet in the middle to shape a triangle. Top with pomegranates seeds.

* For minced beef filling (precooked ground beef, pine nuts)
- Place a portion of filling in the middle of the dough circle; pinch the edges to form an unsealed square. Sprinkle with roasted pine nuts.

Ingredients

1 Tablespoon yeast

1 Teaspoon sugar

1 Cup warm water

2 Cup all-purpose flour

1 Cup chickpeas flour

1 Egg, beaten

1/4 Teaspoon ground cardamom

1/2 Teaspoon saffron

1/2 Teaspoon rose water

Vegetable oil for frying

Sugar syrup, for serving

Pistachio, for garnish

Method

- In a bowl, dissolve yeast and sugar in water and leave for 5 minutes, or until foamy.

- In a large bowl, mix 2 types of flour, eggs, cardamom, saffron and rose water. Add yeast mixture and stir until blended.

- Cover with a kitchen towel and let rise in a warm place for 45 minutes.

- Heat oil to 160 Celsius degrees in a frying pan. Alongside the pan, have ready the bowl of dough and a small bowl of vegetable oil.

- Dip tips of your fingers in the oil. Take some batter (the size of pistachio) with the tip of your fingers, carefully slip batter from your fingers into hot oil. (it will puff into a larger ball).

- Fry fritters, turning to brown evenly for 4 minutes or until golden.

- Take it off with a slotted spoon into a serving plate. Drizzle with sugar syrup and garnish with pistachios.

Stuffed Bread with Sausage and vegetables recipe

Ingredients

For the dough

1 Tbs yeast
1 tsp sugar
1 ½ Cup Warm water
3 Cup Flour
1 tsp salt
1 Tbs oil

For filling
½ Kilo beef sausage
1 Onion, sliced
1 Cup bell pepper (green, yellow, and red), sliced
Salt and pepper
1 Cup mozzarella cheese, grated
Oats for decoration

Method


 - Dissolve yeast and sugar in warm water, leave for 10 minutes or until foamy.
- Combine flour and salt in an electric mixer on low speed.
- Add oil and yeast mixture while constantly mixing for 5 minutes or until soft dough is formed.
- Shape the dough into a ball, place in a greased bowl, cover and let rise for 45 minutes.
- For filling, fry sausage in a skillet over a medium heat, add onion and pepper and stir for 5 minutes, season with salt, pepper, set aside to cool.
- Divide dough into equal parts; roll on a lightly floured surface and cut into rectangles.
- Fill sausage on one side of the edges, top with mozzarella then roll dough into cylinder
(Seal sides of the dough while rolling). Repeat with remaining quantity.
- Place in a baking tray (sealed side on bottom), spray with water then sprinkle oats.
- Cover and keep in a warm place to rise for another half an hour.
- Preheat oven to 180°C.
- Bake for 30 to 35 minutes according to bread size, cool and slice before Serving.

Toast stuffed with chicken recipe

Ingredients

Slices of fresh toast
Skinned and boneless pieces of chicken
Slices of fried chopped onion
Sumac
Dry thyme
Olive oil
Salt and pepper
Normal flour
Whisked eggs
Bread crumbs
Frying oil

Method

• Cut edges from the toast (can be used in making of bread crumbs). Press them.
• Slice the chicken in thin slices and mix with onion. Add sumac, thyme, olive. Season the filling with salt and pepper.
• Put a suitable amount of the filling on one edge of the toast, roll it to take the shape of a finger, and then press it.
• Roll on the flour and dip it in the whisked egg. Roll it in bread crumbs. Make sure it is covered either with flour or bread crumbs.
• Put in the refrigerator for an hour to stiffen. (They could be put in plastic bags and kept in the freezer to be used later.
• Fry in preheated oil until it becomes brown. Put on kitchen towel paper to absorb excess oil.

Ingredients

1whole lamb, about 5-6 Kg

For seasoning:-
1 cup saffron mixture ( saffron threads soaked in water)
1 teaspoon grounded black pepper
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon ground dry coriander
1 teaspoon turmeric
Salt
½ cup corn oil

For filling:-
2 tablespoon oil
1 chopped onion
1 cup chickpeas (cooked)
1 cup cashew and pine nuts
½ cup raisin (soaked)
2 green bell peppers (chopped)
Salt and pepper
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon turmeric
6 boiled eggs

Method

- Wash the lamb inside and out then pat dry.
- Mix the saffron water with all the spices and the oil, stir well.
- Season the lamb with the previous seasoning from outside, cover and set aside in the fridge for 3 hours.
- In a skillet heat oil, add onions, chickpeas, nuts and raisin, stir.
- Add green peppers and eggs; season mixture with salt, pepper and spices.
- Preheat oven to 180 C.
- Fill the lamb with the stuffing, cover and put into the oven until doneness (cooking time is 40 minutes per kilo); the lamb is covered for ¾ of cooking time, then uncovered to brown.
- Garnish with the remaining filling, and serve hot.

How to make Soya Bean Milk (Soya Milk)


Recipe for Soya Milk. Easy to make.


Ingredients for Soya Bean Milk:
  • 90 g. soya beans soaked for 4 hours ( Alternatively you may crack the soya beans before soaking. The skin come loose easily and can be washed away - soaked 2-3 hours)
  • 1 litre water
  • 60 g. sugar to taste
  • 2 screwpine leaves (pandan leaves) knotted
Method:
  1. Wash and remove skin form soya beans. Pound finely.
  2. Put soya beans to boil in water. Do not cover pot. Use low fire to simmer for 20 minutes.
  3. Strain. Boil with sugar and screpine leaves till sugar dossolves.
  4. Remove screwpine leaves.
  5. Serve hot or sold.

Pickled Papaya (Jeruk Betik)


Pickled Papaya (Jeruk Betik) made with red chillies, salt, vinegar and sugar. Simple appetizer which taste both sweet and sour, a delightful combination.


Recipe for Pickled Papaya (Jeruk Betik):
  • 300g. young raw papaya
  • 2 red chillies
  • 1 tsp salt
  • 140 ml. vinegar
  • 2 tbsp sugar
Method:
  1. Slice papaya thinly.
  2. Cut chillies lengthwise.
  3. Season papaya and chillies with salt for about half an hour.
  4. Rinse papaya and chillies. Wipe dry.
  5. Sun for half an hour.
  6. Mix vinegar and sugar until sugar dissolves. Taste.
  7. Add papaya and chillies.
  8. Stand for about half a day before serving.

Falafel Pita with Tahini Sauce Recipe

Yield: Makes 6 servings (serving size: 1 burger, 2 tablespoons tahini mixture)

Ingredients

2/3 cup bulgur
1 (15-ounce) can garbanzo beans, rinsed and drained
1 large egg white
1/2 cup packed fresh parsley leaves
1/4 cup packed fresh mint leaves
1 garlic clove
1/4 teaspoon cayenne pepper
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1/4 cup tahini
2 tablespoons fresh lemon juice
1/4 cup water
4 cups torn lettuce
1 cup roasted red peppers
6 (6-inch) pitas

Preparation

Cook bulgur according to package directions; drain and set aside to cool.

In a food processor, combine cooked bulgur, garbanzo beans, egg white, parsley, 1/4 mint, garlic, cayenne pepper, cumin, salt, and pepper.

Form mixture into 6 (approximately 3-inch) patties and place on a large plate. Refrigerate until firm (20 minutes).

Heat olive oil in a large nonstick skillet over medium-high heat. Cook falafel burgers until browned and heated through (3 minutes per side).

Transfer to a plate.

Before serving, whisk together tahini, lemon juice, and water in a medium bowl until light and fluffy.

Divide falafel burgers, tahini mixture, lettuce, and roasted red peppers among pitas and serve.

Crispy Falafel with Yogurt Dip Recipe

Yield: Makes 4 servings

Ingredients

2 15-ounce cans chickpeas, drained and rinsed well
1/4 cup fresh lemon juice
1 shallot or 1/2 small onion, finely diced
1/2 teaspoon ground cumin
1/2 teaspoon red pepper flakes
3 garlic cloves, minced
2 teaspoons kosher salt
3 tablespoons freshly chopped parsley
1 1/2 cups bread crumbs
2 eggs, whisked
1 1/2 cups plain yogurt
1/8 teaspoon freshly ground pepper
1/4 cup canola oil

Preparation

In a food processor or blender, process the chickpeas, lemon juice, and 1/4 cup of water until almost smooth. Transfer to a large bowl and add the shallot, cumin, red pepper flakes, 2/3 of the garlic, 1 teaspoon of the salt, 2 tablespoons of the parsley, and 1/2 cup of the bread crumbs and mix well. Roll into 16 balls (about 2 inches in diameter) and flatten slightly to form patties.

Place the remaining bread crumbs in a bowl or dish. Dip the falafel patties in the whisked eggs, then roll in the bread crumbs, coating evenly.

Prepare dip: In a medium bowl, combine the yogurt and pepper with the remaining garlic, salt, and parsley. Mix well. Cover and set aside.

Heat half the oil in a large skillet over medium heat. Place 8 of the chickpea patties in the pan and cook until golden brown, about 2 minutes per side. Drain on paper towels. Add the remaining oil, if necessary, and cook the remaining patties. Drain. Serve with the yogurt dip.

If You Don't Have... store-bought bread crumbs, make fresh ones in a food processor. One slice of bread yields about 1/2 cup crumbs.

Puff pastry basics

As with the real thing, we found that the following precautions are necessary to avoid lopsided puff pastry and ensure a successful rise. 
  • To prepare: thaw frozen pastry on the counter until pliable but still chilled(20 to 30 minutes). Unfold and place with creases opening onto a floured surface like a book set face down. Gently press the creases to make a smooth, even sheet. 
  • When using a cookie cutter: dip the cutter periodically in flour so that it does not stick to the dough. Do not twist the cutter to cut. If the layers are pressed together, the dough will not rise evenly. 
  • When using a knife: make sure it is sharp, and do not drag it through the dough to cut. A pastry wheel or pizza cutter may also be used. 
  • Avoid dripping egg wash down the pastry’s sides. This can seal the dough to the pan and prevent the layers from rising. 
  • Avoid rolling over the dough edges with your rolling pin. It can press down the sides. 
  • Position your oven rack in the upper third of the oven to bake.

Opening stubborn jar lids

Here’s another way to remove stubborn jar lids. Invert the jar so that it rests lid-down in about ½ inch of hot tap water in a shallow bowl or pie plate. After 30 seconds or so, the heat will break the vacuum seal and the lid will unscrew easily.

Protecting non-stick pan surfaces

In many home kitchens space is at a premium, so pans are often stacked for compact storage. But this treatment can scratch a nonstick surface. In past There are several means of protecting nonstick finishes such a slipping sheets of paper towel or the plastic lids from supermarket coffee cans between the pans. Another is before stacking the pans, slide them into large plastic zipper lock bags (the 2 gallon size for 10 inch pans and the 1 gallon size for 8 inch pans). The plastic protects the nonstick surface.

It is a bad idea to leave vegetable, fruit, and meat trimmings sitting in the garbage pail for too long, as they will begin to break down and smell. To solve this problem, wrap the handles of a plastic grocery bag around the corners of a drawer beneath her work surface and closes the drawer. Blanching cabbage leaves

Need blanched cabbage leaves for a recipe? There is a method that is easier than cutting out the core and separating the leaves prior to their water bath.

1. After trimming the core of the cabbage by about one inch, she screws a corkscrew into the core.

2. The corkscrew acts as a handle by which you can grasp (using a pot holder) the head of cabbage and lowers it into a pot of boiling water for a few seconds at a time.

3. When the outer leaves are softened, pull the head out of the water and trim off the blanched leaves with a pair of tongs. Repeat the process as many times as necessary to get the number of blanched leaves you need.

Cleaning up spilled oils

Dropping a glass bottle of oil can be quite messy to clean. Most of us usually wipe it off with a cloth, and wash with water and detergent, but still, the grease is always there.

There’s another way to clean the oil slicked floor.
1. Sprinkle a generous amount of flour over the area and wait for the flour to absorb the oil.
2. If there are any glass bits, use brush, if not, a paper towel will do the work. Move the flour around the area to make sure that all the oil has been absorbed.
3. Sweep with a broom and dustpan.
4. Use a window cleaner to wipe away the last traces of oil and flour.

Storing Fruits and Vegetables in the Fridge

There are three categories for fruits and vegetables when it comes to refrigeration: items that should not be refrigerated, those that should be refrigerated in mild/moderate temperature and those that can be stored in the coolest part of the fridge without damaging the item.

1. Prone to chill damage. The following should not be refrigerated. If you do, they are subject for dehydration, internal browning or internal and external cavity.
  • Tropical fruits (mangoes, pineapples – may be refrigerated up to two days only when ripe)
  • Avocadoes
  • Bananas
  • Pickling cucumbers
2. Chill sensitive. These should not be stored below 37 °F.
  • Any snap beans
  • Berries
  • Citrus fruits (grape fruits, oranges, limes)
  • Fresh corn on the cob
3. Not prone to chill-damage. These can be stored in the coolest part of the fridge (provided that the temperature does not freeze the item).
  • Lettuces
  • Other leafy greens
  • Apples
  • Asparagus
  • Broccoli
